Here&#8217;s an oldie but goodie from the Green Earth Girl archives&#8230; I&#8217;m willing to bet that the title of this blog looks like gibberish to about half of the people reading. That&#8217;s okay, because you&#8217;re about to learn something new and delicious. Hamantaschen are traditional Jewish cookies made to celebrate Purim (which is a lengthy holiday that I will let you google if you&#8217;re interested in it). They&#8217;re basically sugar cookies with filling, but in actuality they&#8217;re so much more than that. No worries for those who are nervous, this was my first time making them too!

Cupcakes have been trendy for a long while now, and why shouldn&#8217;t they be? They&#8217;re delicious little slices of cake. They deserve all the praise they get. While preparing to make some for a friend&#8217;s birthday, I started seeing cupcake wraps everywhere. These aren&#8217;t cupcake liners or tins, they&#8217;re a second layer that make cupcakes look even more precious and special than before. Here&#8217;s my first product review &#8211; the one I hinted at ever so slightly yesterday. I picked up this Re-Pac Bag at a gift guide expo in New York. It certainly isn&#8217;t the only re-useable lunch/storage bag out there, but it does have an edge on some of the competitors&#8230;It&#8217;s dishwasher safe! Speaking as someone who no longer has a washing machine (please, cry a million tears for me), this is a huge advantage over cloth bags. Are any of you on Pinterest? Organic Gardening just got one, and I&#8217;ve found it to be a great place for inspiration, both in the garden and in the kitchen. The recipes on Pinterest lean toward the unhealthy/comfort food side of things, and while I think indulgence is great every once in a while, it&#8217;s also nice to find healthy comfort food. I love enchiladas; they&#8217;re so versatile, and can be made with basically any vegetables that happen to be laying around. And now, knowing how beautifully they freeze, I love them even more! 
Because enchiladas are so adaptable, we&#8217;re going to do things a bit differently today. I want to encourage all of you to do your own thing, so below is my enchilada formula, with some suggestions. Take this and run with it. Vegan week has come to a close. This week presented a few challenges to my willpower, including a dinner party and a night at a friend&#8217;s parents&#8217; house, but I made it through. Will I become a vegan now? I don&#8217;t think so. I do think it was healthier than my normal diet, so I hope to keep aspects of it in my normal life.
